Superfood Berry Lemon Herb Salad (Print Version)

A colorful salad of super greens, berries, and creamy lemon-herb dressing for a refreshing, nutritious dish.

# Ingredients:

→ Salad

01 - 3 cups super greens mix (baby spinach, baby arugula, red & green Swiss chard, chicory, green cabbage, chopped Brussels sprouts)
02 - 1 cup kale, roughly chopped
03 - 1 cup strawberries, diced
04 - 1 cup blackberries
05 - 1 cup blueberries
06 - ¼ cup shelled pistachios, roughly chopped
07 - 2 tablespoons pepitas
08 - Blueberry goat cheese, crumbled (or regular goat cheese as an alternative)

→ Dressing

09 - ¼ cup plain Greek yogurt (nonfat)
10 - 2 tablespoons freshly squeezed lemon juice
11 - 1 teaspoon mustard
12 - 1 tablespoon extra virgin olive oil
13 - ¼ cup fresh mint leaves, packed
14 - ¼ cup fresh parsley leaves
15 - 2 tablespoons fresh oregano leaves, packed
16 - Coarse salt and ground black pepper to taste

# Steps:

01 - In a blender or food processor, pulse all ingredients for the dressing until completely combined. Add salt and pepper to taste. Set aside.
02 - In a large bowl, toss together all ingredients for the salad with the prepared dressing. Top with freshly ground black pepper as desired.
03 - Serve the salad fresh and enjoy immediately.
