In a blender or food processor, blend the sugar, lemon juice, peach slices, and cold water until everything's smooth.

Pour the smooth blend into a metal loaf pan or another safe container for freezing. If it’s uncovered, keep the top wrapped with parchment paper or foil.

Put the covered container in the freezer and let it freeze for at least 4 hours until it’s solid.

Take the sorbet out of the freezer. Let it sit for about 5 minutes at room temp so it softens a bit, then scoop it out and enjoy right away.
