Sweet Savory Bacon Pancakes (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 1 tsp baking soda
02 - 2 tbsp brown sugar
03 - 1/4 tsp salt
04 - 2 cups all-purpose flour
05 - 1 tsp baking powder

→ Wet Ingredients

06 - 2 small eggs
07 - 1 tsp vanilla extract
08 - 1 cup milk (you can use plant-based milk too)

→ Other Ingredients

09 - 3 tbsp butter for frying
10 - 8 oz cooked and chopped bacon strips

# Steps:

01 - In a blender, toss in milk, vanilla, eggs, baking soda, baking powder, salt, and brown sugar. Blend quickly to combine everything. Add flour last and give it a short blend just until smooth. If using a bowl and whisk instead, sift the flour first to prevent lumps, then gently mix everything until it’s just blended. Don’t overdo it—nobody likes chewy pancakes!
02 - Warm up your skillet and cook the diced bacon until it’s nice and crispy. Once done, remove the bacon to set aside. Leave the leftover bacon grease in the skillet if you want extra flavor.
03 - In the same skillet over medium-low heat, toss in a little butter if needed. Scoop in your pancake mix and scatter some cooked bacon onto the wet batter. Cook for about a minute or two until the edges begin to look set. Once you notice bubbles on top, it’s time to flip! Keep going with the rest of the batter.
04 - Eat while hot! Enjoy them with a drizzle of syrup, some butter, or extra bacon. Got a lot of pancakes to make? Pop the finished ones in the oven on low heat until everyone’s ready to dig in.

# Notes and Tips:

01 - For a smoky taste, leave a little bacon grease in your pan. Too much? Just drain the extra. Don’t forget to add butter if the pan starts getting too dry as you go.
