01 -
Preheat the oven to 200°C.
02 -
In a large skillet over medium-high heat, brown ground beef while breaking up with a spoon. Cook until no longer pink and drain excess fat.
03 -
Return cooked beef to skillet. Stir in taco seasoning and water. Bring the mixture to a boil, then reduce heat and simmer until thickened, about 4-5 minutes.
04 -
Heat vegetable oil in a large skillet over medium heat. Fry each tortilla individually for 3–4 minutes, flipping frequently until golden and crisp. Drain on paper towels and set aside.
05 -
Warm refried beans in a microwave-safe bowl until spreadable.
06 -
Spread a generous layer of warm refried beans on each crispy tortilla base, then top evenly with seasoned ground beef.
07 -
Place a second fried tortilla atop each prepared base. Spoon approximately 2 tablespoons enchilada sauce onto the top tortilla, and sprinkle with shredded Mexican cheese blend.
08 -
Position the assembled pizzas on a large nonstick baking sheet and bake for 8–10 minutes, or until cheese is fully melted and bubbly.
09 -
Remove from oven, slice, and finish with desired toppings such as diced tomatoes, sliced green onions, olives, and sour cream. Serve immediately.
