Poke holes all over the sweet potatoes with a fork. Add to a bowl or plate with some water and microwave on high for 10 minutes. If not cooked, microwave for an additional 5 minutes. Cook in two batches if necessary.

Heat a skillet over medium-high heat. Add ground beef, onion, and garlic. Stir and cook until browned, about 5-7 minutes. Drain the grease.

Add chili powder, cumin, sea salt, black pepper, paprika, garlic powder, onion powder, crushed red pepper flakes, dried oregano, salsa, and water. Stir well and cook on low heat for 5 minutes.

Once sweet potatoes are cooked, let them cool slightly. Slice each lengthwise to open without cutting through completely. Stuff with cooked beef mixture.

Top stuffed sweet potatoes with shredded mozzarella, diced tomatoes, mashed avocado, and sour cream. Serve immediately.
