Taco Stuffed Sweet Potatoes (Print Version)

# Ingredients:

01 - 1 lb lean ground beef
02 - 1 white onion, chopped
03 - 4 cloves garlic, minced
04 - 1 tsp chili powder
05 - 1/2 tsp ground cumin
06 - 1/2 tsp sea salt
07 - 1/2 tsp ground black pepper
08 - 1/2 tsp ground paprika
09 - 1/4 tsp garlic powder
10 - 1/4 tsp onion powder
11 - 1/4 tsp crushed red pepper flakes
12 - 1/4 tsp dried oregano
13 - 1 cup chunky salsa
14 - 1/2 cup water
15 - 4 sweet potatoes

16 - Shredded mozzarella
17 - Diced tomatoes
18 - Mashed avocado
19 - Sour cream

# Instructions:

01 - Poke holes all over the sweet potatoes with a fork. Add to a bowl or plate with some water and microwave on high for 10 minutes. If not cooked, microwave for an additional 5 minutes. Cook in two batches if necessary.
02 - Heat a skillet over medium-high heat. Add ground beef, onion, and garlic. Stir and cook until browned, about 5-7 minutes. Drain the grease.
03 - Add chili powder, cumin, sea salt, black pepper, paprika, garlic powder, onion powder, crushed red pepper flakes, dried oregano, salsa, and water. Stir well and cook on low heat for 5 minutes.
04 - Once sweet potatoes are cooked, let them cool slightly. Slice each lengthwise to open without cutting through completely. Stuff with cooked beef mixture.
05 - Top stuffed sweet potatoes with shredded mozzarella, diced tomatoes, mashed avocado, and sour cream. Serve immediately.

# Notes:

01 - You can cook sweet potatoes in batches if your microwave is small.
