Follow the instructions on the bag to bake the tots until they're crispy and golden brown. Get your oven ready beforehand.

Use a skillet over medium heat to brown the ground beef. Don’t forget a pinch of salt and pepper. Once it’s ready, get rid of any excess fat.

In a big bowl, throw in the browned beef, slightly crushed crispy tater tots, Monterey Jack and cheddar cheese (half of each). Give it all a good mix until it’s blended.

Warm your tortillas quickly in a microwave or dry skillet for 10-15 seconds each, so they’re soft and easy to handle.

Scoop some filling into the middle of each tortilla. Add a dab of sour cream and top it with a drizzle of the chipotle sauce.

Tuck the sides of the tortilla in first, then roll the bottom up around the filling. Roll tightly to keep the shape.

In a baking dish, lay the burritos down. Sprinkle the shredded cheese you saved earlier over the top. Bake them at the same oven temperature for 5-10 minutes until the cheese melts and looks bubbly.

Get the burritos out of the oven. Add diced tomatoes, fresh cilantro, and green onions on top if you like. Serve warm with sour cream and chipotle sauce on the side.
