Turkey Sausage Biscuit Muffins (Print Version)

# Ingredients:

01 - 1 Eckrich Turkey Skinless Smoked Sausage Rope
02 - 1 can Refrigerated Biscuits
03 - 6-8 large Eggs
04 - 1/2 cup Shredded Cheddar Cheese
05 - 1/3 cup Spinach, chopped
06 - Salt to taste
07 - Pepper to taste

# Steps:

01 - Preheat the oven to 375 degrees Fahrenheit.
02 - Chop the turkey sausage into bite-size pieces and set aside.
03 - Crack the eggs into a large bowl or measuring cup. Whisk the eggs to scramble them. Roughly chop the spinach and add it into the eggs along with the shredded cheese, salt, and pepper. Whisk once more to combine.
04 - Grease a nonstick muffin tin with butter or spray. Place the biscuits into the muffin tins and use your fingers to mold the biscuits to the tins, creating a biscuit cup.
05 - Pour the egg mixture into the biscuit-lined muffin tins, filling about one-third of the way. Top with the chopped turkey sausage.
06 - Bake the muffins for 20 minutes, or until the eggs are completely cooked.
07 - Top the muffins with additional shredded cheddar cheese and place in the oven for 1-2 minutes to allow it to melt.
08 - Serve the muffins as desired.

# Notes and Tips:

01 - Use a nonstick muffin tin to prevent sticking. You can substitute spinach with kale or omit the greens altogether.
