Heat a pan over medium-high heat. Season shrimp with salt and pepper. Sauté shrimp with minced garlic in butter until pink and cooked through, about 3–4 minutes. Set aside.

Brush each slice of bread with melted butter and sprinkle with minced garlic.

Layer shredded mozzarella cheese and grated Parmesan cheese on two slices of prepared bread. Add sautéed shrimp on top of the cheese layers. Close the sandwich with the remaining bread slices.

Place the assembled sandwiches onto a preheated skillet over medium heat. Grill each side for 4–5 minutes, pressing gently, until the bread is golden brown and crispy, and the cheese is melted.

Remove the grilled cheese sandwiches from the pan. Garnish with fresh parsley if desired and serve with a side salad or chips.
