Take the pan off the heat. If you're using a vanilla bean, scrape the seeds into the mix and add the pod too. Stir in honey to get the sweetness you want. You can use vanilla extract if you don’t have a bean.

Heat water in a saucepan until it boils. Toss in the tea bags, ground cinnamon, cardamom, cloves, and ginger. Lower the heat and let it simmer for 5 minutes to mix the flavors.

Take out the tea bags and vanilla pod. Let the mixture cool down to room temperature. To speed things up, set the pan in a bowl with ice water.

Pour the milk into a container to froth it with a milk frother. You can also shake it in a jar with a lid. If you don't have a frother, gently heat the milk and whisk until frothy. Add vanilla extract to the milk now if you're using it.

Fill a large glass with ice cubes. Pour the cooled chai over the ice until the glass is about two-thirds full.

Gently pour the frothed milk on top of the chai. Add cinnamon, vanilla pieces, or star anise for decoration if you want. Enjoy right away!
