Vegan Chocolate Chip Bars (Print Version)

# Ingredients:

01 - 2 and 1/3 cups gluten-free rolled oats
02 - 1 large banana
03 - 1/2 cup unsweetened applesauce
04 - 2 flax eggs
05 - 1/2 tsp sea salt
06 - 1 tbsp vanilla extract
07 - 1/4 cup date syrup
08 - 1/2 cup vegan chocolate chips

# Instructions:

01 - Preheat the oven to 350°F.
02 - Add all the ingredients except the chocolate chips and 1/3 cup of oats in a blender and blend until smooth.
03 - Stir in the chocolate chips and remaining oats.
04 - Pour and spread the batter evenly into a baking dish.
05 - Bake for 25 to 30 minutes. Cool for 5 to 10 minutes before slicing the vegan chocolate chip cookie bars.

# Notes:

01 - The cookie dough is similar to a very thick cake batter but can be thinned with a few tablespoons of almond milk if needed.
02 - Let the bars cool before slicing to ensure they hold their shape better.
03 - Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months. To serve, either bring to room temperature or reheat in the microwave for 1 to 2 minutes.
