Whisk the mashed banana or coconut cream, or flax eggs with salt, milk, sweetener, and optional cinnamon and nutritional yeast in a mixing bowl.

Dip each slice of bread fully into the batter mixture. Place them in a shallow dish, pour any remaining liquid over the slices, and soak for 10-15 minutes, flipping halfway through to ensure even absorption.

Heat a greased nonstick pan over medium heat. Place the soaked bread slices in the pan and cook for 1 1/2 minutes on one side, then flip and cook for another minute or until each side is lightly browned. Repeat with the remaining slices.
