Vegan Pecan Pie Holiday (Print-Friendly Version)

# Ingredients You'll Need:

01 - 1 1/2 cups chopped pecans
02 - 3/4 cup pure maple syrup or agave
03 - 2 tablespoons molasses or additional pure maple syrup
04 - 3 tablespoons almond butter or vegan butter
05 - 1/4 cup ground flaxmeal whisked with 1/3 cup water
06 - 2 tablespoons bourbon (optional)
07 - 1 1/2 teaspoons pure vanilla extract
08 - 1/2 teaspoon salt
09 - 1/2 cup mini chocolate chips (optional)
10 - 1 handful whole pecan halves for garnish
11 - 1 9-inch vegan pie crust

# How to Make It:

01 - Whisk all ingredients except the whole pecan halves, and refrigerate for at least 30 minutes. The filling will gel during this time due to the flaxmeal thickening.
02 - Preheat the oven to 350°F (175°C).
03 - Pour the filling into the pie crust. Arrange the halved pecans on top as desired for garnish.
04 - Bake on the center rack of the oven for 35 minutes. After baking, turn off the oven but do not open the door. Let the pie sit in the cooling oven for an additional 10 minutes.
