Line a sheet pan or an eight-inch square pan with parchment paper. Set aside.

Combine the sugar, salt, water, and plant-based butter in a heavy-bottom saucepan. Slowly bring to a boil over low-medium heat, stirring constantly.

Continue stirring until the mixture thickens and turns light brown. Use a candy thermometer to ensure it reaches 149°C (300°F).

Turn off the heat, stir in the vanilla extract, and pour the mixture into the prepared pan. Smooth out evenly with a spatula.

Sprinkle chocolate chips over the toffee, or melt the chocolate first and pour it on top. Add toasted nuts or toppings of choice. Let sit until fully set, about two hours or overnight.

Break the set toffee into pieces and store in an airtight container at room temperature or in the freezer.
