Homemade Veggie Sushi (Print Version)

# Ingredients:

→ Sushi Rice

01 - 1 cup small or medium grain white rice
02 - 1 cup + 1 tbsp water
03 - 2 tablespoon seasoned rice vinegar
04 - 1 teaspoon salt

→ Vegetable Sushi Roll

05 - 1 sheet nori (seaweed paper)
06 - 1/2 - 1 teaspoon white or black sesame seeds
07 - 1/4 cup vegetables of choice, cut into matchsticks
08 - Pickled ginger (optional)
09 - Wasabi (optional)

# Instructions:

01 - Rinse the rice in a fine mesh strainer until water runs clear, then shake off excess water. Add rinsed rice, salt, and water to the Instant Pot. Cook on high pressure for 6 minutes with full natural release. Transfer cooked rice to a bowl, add rice vinegar evenly over top, and gently fold to incorporate without smashing the rice.
02 - Cover a bamboo sushi rolling mat with plastic wrap. Place a sheet of nori on the mat. Dip hands in water and clap to remove excess (keep a small bowl of water and towel nearby). Spread about 1 cup of cooked rice across the nori, covering it to all edges but leaving a 1-inch margin on the top edge.
03 - Arrange your chosen vegetable matchsticks horizontally across the center of the rice-covered nori.
04 - Use the bamboo mat to lift the bottom edge up and over the filling. Use your fingers to tuck the roll as you go. Pull back on the mat and tighten to create a compact roll. Continue shaping and squeezing gently with the mat until you have a firm roll with the bare nori edge sealed.
05 - Cover the entire nori sheet with rice (no gap at top). Sprinkle with sesame seeds, then flip the whole sheet over so rice is facing down and nori is facing up. Add fillings and roll as described in the regular roll method.
06 - With a sharp knife, cut the roll in half, then cut each half into 3 segments (6 pieces total). Wipe the knife with a damp towel after each cut to prevent sticking. Serve with optional pickled ginger and wasabi.

06 - Sweet Potato Roll: Roasted sweet potato topped with spicy Sriracha mayo or bang bang sauce
07 - Dragon Roll: Roasted sweet potato and cucumber inside, sliced avocado layered on top
