Verde Eggs Tortilla Breakfast (Print-Friendly Version)

Crunchy chips bathed in verde sauce with tangy cabbage, creamy topping and runny eggs. Great for a hearty morning meal.

# Ingredients You'll Need:

→ Spiced cabbage

01 - 2 cups green cabbage, thinly sliced
02 - 1 tablespoon veggie oil
03 - 1 tablespoon white vinegar
04 - 0.5 teaspoon taco mix
05 - 0.5 teaspoon sea salt
06 - Ground black pepper, as needed

→ Corn chips

07 - 0.25 cup veggie oil
08 - 8 corn tortillas, sliced into 8 triangles each
09 - 0.5 teaspoon sea salt, with extra for sprinkling
10 - 1 cup green salsa, homemade or bought

→ Tangy sauce

11 - 0.25 cup sour cream
12 - 1 tablespoon whole milk
13 - 2 teaspoons lime juice (from 2 limes)
14 - 1 teaspoon taco mix

→ Topping choices

15 - 4 large eggs, sunny-side up
16 - Avocado slices or guacamole
17 - Crumbled queso fresco
18 - Spicy sauce
19 - Jalapeños, deseeded and cut thin, fresh or pickled
20 - Thinly cut white or red onion
21 - Fresh cilantro, chopped fine

# How to Make It:

01 - Throw green cabbage, veggie oil, white vinegar, taco mix, sea salt, and black pepper in a bowl. Mix everything well so the cabbage gets coated all over.
02 - Get your veggie oil hot in a big pan over medium-high heat until it's shiny. Toss in half the tortilla triangles and cook till they're golden on both sides, about 1-2 minutes per batch. Put them on paper towels, sprinkle some salt on top. Do the same with the rest, adding more oil if you need to. Dump any leftover oil when you're done.
03 - Using the same pan on medium, pour in your green salsa and let it warm up for 2 minutes. Dump all your fried chips in and flip them around gently so they get covered in salsa without breaking. Let them cook 3 more minutes until they're warm and a bit soft. Add more salt if you want.
04 - In a small bowl, stir together your sour cream, milk, fresh lime juice, and taco mix until it's all smooth and blended.
05 - Put your warm salsa-soaked chips on plates. Add your tangy sauce, spiced cabbage, and whatever else you want - eggs, avocado, queso fresco, hot sauce, jalapeños, onions, or cilantro.
