Cheese Bacon Cob Loaf (Print Version)

A warm, savory cob loaf filled with a creamy cheese and bacon mix, paired with bread for dipping. Perfect for sharing.

# Ingredients:

01 - 200 g bacon, diced
02 - 1 cob loaf (large round bread)
03 - 250 g sour cream
04 - 1 tbsp French onion soup powder
05 - 1 1/2 cups shredded pizza cheese (blend of mozzarella, cheddar, parmesan), save a small handful for the top
06 - 100 g brie cheese (optional)
07 - 250 g cream cheese
08 - 1 onion, finely chopped

# Steps:

01 - Turn your oven on to 110°C. Cut about 2 cm off the top of the cob loaf, pull out the soft bread inside, and tear it into smaller chunks. Spread the lid, bread chunks, and hollowed bread on a baking tray with parchment and toast for 5-10 minutes.
02 - Throw the bacon and onion into a saucepan over medium heat. Stir every so often and let it cook for 3-5 minutes until it smells amazing and looks cooked.
03 - Lower the heat and stir in the cream cheese and sour cream until they’re smooth. Toss in the French onion soup powder, brie cheese (if using), and most of the pizza cheese (don't forget to save some for later). Keep stirring for about 2 minutes until it’s all melted and heated through.
04 - Take the tray out of the oven and crank the temperature up to 200°C. Move the bread chunks and lid into a bowl. Spoon the cheese mix into the cob loaf, sprinkle the saved cheese on top, and bake it for 10 minutes until bubbly and golden on top.
05 - Serve the cheesy dip warm with the toasted bread chunks on the side. You can also cut up the bread lid to use for scooping if you’d like.

# Notes and Tips:

01 - Mix things up by adding cooked chicken, sweetcorn, or a hit of curry powder.
02 - Crab meat or finely chopped spinach makes a tasty addition.
03 - Turn up the heat by adding chili flakes, smoked paprika, or cayenne.
04 - No cob loaf? Pop the filling in a ramekin or oven-safe bowl, and it’ll work just as well.
05 - No loaf on hand? Serve with veggie sticks, corn chips, or extra bread chunks.
06 - Don’t let the cheese mixture overcook—heat gently until just melted.
