Blueberry Muffin Cookies (Print-Friendly Version)

# Ingredients You'll Need:

01 - 2 sticks butter, softened
02 - 1 cup sugar
03 - 1 tablespoon vanilla extract
04 - 1 large egg
05 - 2 tablespoons milk

06 - 3 cups all-purpose flour
07 - 1 tablespoon baking powder
08 - 1 package (about 8 ounces) dried blueberries

→ Filling

09 - 1 jar blueberry jam

# How to Make It:

01 - Lightly spray a deep dish cookie pan with cooking spray and set aside.
02 - In a mixing bowl, combine the softened butter and sugar. Mix until the texture is light and creamy. Add the vanilla extract, egg, milk, and 1 tablespoon of blueberry jam. Mix until well blended.
03 - In a separate bowl, combine the flour and baking powder. Stir to distribute evenly. Add the dried blueberries to the flour mixture and mix to coat.
04 - Gradually add the dry mixture to the wet mixture. Mix until the dough is thoroughly blended.
05 - Using a cookie scoop or tablespoon, place a large dollop of dough into the prepared cookie pan. Place 1 teaspoon of blueberry jam in the center of the dough. Add another dollop of dough on top to cover the jam, pinching the edges to seal.
06 - Preheat the oven to 350°F (175°C). Place the cookie pan in the oven and bake for 12-15 minutes or until the cookies turn golden brown.
07 - Remove the cookies from the oven and transfer to a wire rack to cool completely. Once cooled, serve and enjoy.
