Caprese Cottage Cheese Toast (Print Version)

# Ingredients:

01 - 1 tablespoon extra-virgin olive oil
02 - 2 cups cherry tomatoes
03 - 2 garlic cloves, minced
04 - 1 teaspoon sugar
05 - Kosher salt
06 - Freshly ground black pepper
07 - 2 slices sourdough bread, toasted
08 - 1 cup cottage cheese, divided
09 - ¼ cup chopped fresh basil
10 - 2 tablespoons balsamic glaze
11 - 1 tablespoon hot honey

# Steps:

01 - Heat the olive oil in a skillet over medium heat. Add the tomatoes, garlic, sugar, and a pinch of salt and pepper. Cook, shaking the pan and stirring often, until the tomatoes burst and form a sauce-like consistency, about 10 to 12 minutes. Turn off the heat.
02 - Spread ½ cup of cottage cheese onto each slice of toasted sourdough bread. Season with a sprinkle of salt and pepper. Top with the prepared tomato mixture, followed by fresh basil. Drizzle with balsamic glaze and hot honey. Serve immediately.
