Remove the pit from the cherries. Add the cherries, 1 tablespoon of simple syrup, 1 cup of sparkling water, half of the lemon juice, and 1 cup of crushed ice to a blender. Blend until smooth and set aside in a bowl.

Add the frozen peaches, 1 tablespoon of simple syrup, the remaining half of the lemon juice, 1 cup of sparkling water, and 1 cup of crushed ice to the blender. Blend until smooth and set aside in another bowl.

Place the two bowls in the freezer for 30 to 60 minutes. When the mixtures begin to freeze, scrape them using a fork. Repeat this process one or two more times, freezing for an additional 30 to 60 minutes between scrapes.

Layer the cherry and peach slushie mixtures in a glass. Serve immediately.
