One-Pan Chicken Sweet Potato Skillet (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 lb boneless skinless chicken thighs (or 2 large breasts)
02 - 2 medium sweet potatoes, peeled and diced
03 - 1 medium onion, diced
04 - 3 cloves garlic, minced

→ Seasonings

05 - 1 teaspoon paprika
06 - 1 teaspoon ground cumin
07 - 1 teaspoon salt
08 - 1/2 teaspoon black pepper
09 - 1/4 teaspoon chili flakes (optional)

→ Additional Ingredients

10 - 2 tablespoons olive oil
11 - 1 teaspoon fresh thyme or rosemary, chopped
12 - 1 tablespoon lemon juice (optional)

# Instructions:

01 - Pat chicken dry and season with paprika, cumin, salt, and pepper.
02 - Heat 1 tablespoon oil in skillet. Cook chicken 4-5 minutes per side until golden. Remove and set aside.
03 - Add remaining oil and sweet potatoes. Cook 7-10 minutes until starting to caramelize. Add onion and garlic, cook 2 minutes.
04 - Return chicken to pan, add herbs. Cover and cook 5-7 minutes until chicken reaches 165°F and potatoes are tender.
