Line an 8x8 baking pan with parchment paper, spray with nonstick cooking spray, and set aside.

Place white chocolate chips in a medium bowl and semi-sweet chocolate chips in another medium bowl. Divide sweetened condensed milk evenly between the two bowls.

Melt the semi-sweet chocolate mixture in the microwave in 30-second increments, stirring in between each round. Add 1 teaspoon of vanilla extract and stir to combine. Spread the mixture evenly into the prepared baking pan.

Melt the white chocolate mixture in the microwave in 30-second increments, stirring in between each round. Add 1 teaspoon of vanilla extract and stir to combine. Mix in the Christmas sprinkles and spread this layer evenly on top of the semi-sweet chocolate fudge layer.

Top with additional sprinkles and chill the pan in the refrigerator for at least one hour before slicing and serving.
