Protein-packed sweet breakfast rolls (Print Version)

# Ingredients:

→ For the Dough

01 - 1 cup cottage cheese
02 - 3/4 cup white sugar
03 - 2 eggs
04 - 1/2 cup oil
05 - 1/2 cup milk
06 - 2 tablespoons baking powder
07 - 4 1/4 cups flour (plus more for dusting)

→ For the Filling

08 - 2 cups packed brown sugar
09 - 1 1/2-2 tablespoons cinnamon
10 - 1/2 cup butter
11 - 1/2 cup honey

# Instructions:

01 - Preheat your oven to 325°F (163°C). While it's heating up, grease a 9x13 inch baking pan with butter or cooking spray to prevent the rolls from sticking.
02 - Add the cottage cheese to a blender and blend until completely smooth with no lumps. Then add the white sugar, eggs, oil, and milk, and blend again until the mixture is smooth and well combined.
03 - Pour the blended mixture into a large bowl. Add the baking powder and stir to combine. Gradually add the flour, about a cup at a time, mixing until the dough comes together and becomes smooth. It should be soft but not sticky.
04 - Dust your work surface with flour. Turn the dough out onto the floured surface and roll or stretch it into a large rectangle, approximately 12x18 inches. The dough should be about 1/4 inch thick.
05 - In a small bowl, mix together the brown sugar and cinnamon until well combined. Melt the butter and have it ready for brushing.
06 - Brush the melted butter evenly over the entire surface of the rolled-out dough. Drizzle the honey over the butter layer. Then sprinkle the brown sugar and cinnamon mixture evenly across the entire surface, leaving a small border at one end.
07 - Starting from the long edge (opposite from the border you left), carefully roll the dough into a tight log. Once rolled, use a sharp knife or dental floss to cut the log into 1 to 1 1/2 inch slices.
08 - Place the cut rolls in your greased baking pan, leaving a little space between each for expansion. Bake in the preheated oven for 35-40 minutes, until the rolls are golden brown and cooked through.
09 - Remove the rolls from the oven and let them cool for a few minutes before serving. These cinnamon rolls are best enjoyed warm right out of the oven!

01 - Full-fat (4% milkfat) cottage cheese works best for soft, tender rolls with rich flavor.
02 - Make sure all your ingredients are at room temperature for the best dough consistency.
03 - If your cottage cheese is particularly watery, drain excess liquid before blending to maintain proper dough consistency.
