Preheat your oven to 325°F (163°C). While it's heating up, grease a 9x13 inch baking pan with butter or cooking spray to prevent the rolls from sticking.

Add the cottage cheese to a blender and blend until completely smooth with no lumps. Then add the white sugar, eggs, oil, and milk, and blend again until the mixture is smooth and well combined.

Pour the blended mixture into a large bowl. Add the baking powder and stir to combine. Gradually add the flour, about a cup at a time, mixing until the dough comes together and becomes smooth. It should be soft but not sticky.

Dust your work surface with flour. Turn the dough out onto the floured surface and roll or stretch it into a large rectangle, approximately 12x18 inches. The dough should be about 1/4 inch thick.

In a small bowl, mix together the brown sugar and cinnamon until well combined. Melt the butter and have it ready for brushing.

Brush the melted butter evenly over the entire surface of the rolled-out dough. Drizzle the honey over the butter layer. Then sprinkle the brown sugar and cinnamon mixture evenly across the entire surface, leaving a small border at one end.

Starting from the long edge (opposite from the border you left), carefully roll the dough into a tight log. Once rolled, use a sharp knife or dental floss to cut the log into 1 to 1 1/2 inch slices.

Place the cut rolls in your greased baking pan, leaving a little space between each for expansion. Bake in the preheated oven for 35-40 minutes, until the rolls are golden brown and cooked through.

Remove the rolls from the oven and let them cool for a few minutes before serving. These cinnamon rolls are best enjoyed warm right out of the oven!
