Bacon Guacamole Cheese Melt (Print Version)

Crunchy, gooey, and packed with smoky bacon, creamy guac, and melty cheese.

# Ingredients:

01 - 2 tbsp softened salted butter
02 - 2 pieces of sourdough bread
03 - 1/2 cup shredded Colby Jack cheese
04 - 2 tbsp guacamole, softened
05 - 4 cooked bacon strips
06 - Optional: A few tortilla chips (about 3-4)

# Steps:

01 - Heat a skillet on medium until warm.
02 - While the skillet heats, spread butter on one side of each bread slice.
03 - Put a slice of bread, buttered side down, on a non-stick surface or directly in the skillet. Add half the cheese on the non-buttered side, layer the guacamole, bacon, tortilla chips (if you're using them), and finish with the rest of the cheese. Top with the other slice of bread, buttered side facing out.
04 - Place the sandwich in the skillet and let the bottom turn a nice golden color, about 2-4 minutes.
05 - Turn the sandwich over with a spatula and cook the other side until golden and the cheese is melted through. Serve right away.
