Heat a grill to medium-high heat. Brush the cut halves of each peach with oil, then lay them cut side down on the grill and close the lid.

Cook the peaches for 3-4 minutes until grill marks appear. Flip them and cook for an additional 3-4 minutes until warm and softened.

Remove the peaches from the grill, drizzle with honey, and top each peach half with a scoop of vanilla ice cream. Serve immediately.
