Line the bottom of the pan with parchment paper for easy release.

Spread a thin layer of mousse on the bottom of the pan. Cover with half the cookies arranged in a single layer.

Spread half the remaining mousse evenly over the cookies. Repeat the layers with the remaining cookies and mousse.

Freeze the layered cake until firm. Push up the pan bottom and carefully transfer the mousse cake onto a serving plate. Garnish as desired.
