Grease a nonstick pan or add a little oil to prevent sticking. Dice the bell pepper and optional vegetables of choice, and mince the garlic.

Sauté the diced vegetables and garlic over medium heat until they are lightly browned.

Drain the tofu. If using firm tofu, break it up with a spatula while adding it to the pan. Silken tofu will naturally break up as you stir.

Add the curry powder, onion powder, turmeric, salt, and black pepper if desired. Stir occasionally and cook until the tofu is hot and excess liquid has evaporated, resembling scrambled eggs.

Stir in the spinach or kale and cook until wilted.

Serve the tofu scramble with toast, home fries, sliced avocado, salsa, hot sauce, or a sprinkle of nutritional yeast.
