Use a big pan on medium heat to cook the sausage, crumbling it into tiny bits as it cooks. Stir every so often until it's completely done and golden. Take it out of the pan and set it aside.

Grab a bowl and whisk the eggs, milk, salt, and pepper together until it's all mixed up nicely.

In that same pan, heat up a little oil or butter, then toss in the egg mix. Cook it over medium-low heat, stirring now and then, until the eggs are soft and just set. Move them out of the pan and set aside.

Spread the tortillas on a flat surface. Pop the cooked sausage and scrambled eggs evenly onto each one. Sprinkle with the cheddar cheese.

Gently roll each tortilla up nice and tight so everything stays inside.

Using the same pan, warm up a touch of butter or oil on medium heat. Put the wraps in seam-side down. Let them cook for 2-3 minutes, turning so all the sides get golden and the cheese melts.

Slice each roll-up into smaller pieces and serve them while they're still warm.
