Quick Spinach Feta Quesadillas (Print Version)

# Ingredients:

→ Base Ingredients

01 - 4 medium tortillas (flour, whole wheat, or gluten-free)
02 - 2 cups fresh spinach, chopped
03 - 1 cup feta cheese, crumbled
04 - 2 tablespoons olive oil or butter

→ Optional Add-ins

05 - 1/4 cup sun-dried tomatoes, chopped
06 - 1/4 cup black olives, sliced
07 - 1/2 cup cooked grilled chicken, diced

# Instructions:

01 - Rinse and chop spinach. Crumble feta cheese. Prepare any optional add-ins.
02 - Spread spinach and feta on one half of each tortilla. Add optional ingredients if desired. Fold tortillas in half.
03 - Heat oil in non-stick skillet over medium heat. Cook quesadillas 2-3 minutes per side until golden and crispy.
04 - Slice into wedges and serve warm with preferred dipping sauce.
