In a small dish, stir together mayo and pesto until it’s smooth.

Spread apple butter down the middle of each tortilla. Lay down one slice of cheese, then add 3 oz turkey, onion slices, a couple of bacon strips, and some mushrooms. Scoop a tiny bit of pesto mayo on top (1 to 2 teaspoons).

On a panini maker, toast until golden. If you’re using a skillet, cook like a grilled cheese and press it lightly with a flat pan or griddle weight.
